The Pimpenelle Sanguisorba officinalis is a herbaceous plant which is also known by the name of Pied-de-Coq. It has erect rods and dark green leaves, and flowers from June to September with pink or red flowers in the shape of a ears. Pimprenelle is from Europe and Asia, and has been used since Antiquity for its medicinal properties. Pimprenelle leaves can be used as an ingredient in salads, soups and sauces, or as a garnish for meat and fish dishes. They can also be jumped as a vegetable, or added to omelettes and quiches.
